NEW YEAR’S DINNER

This New Year’s Eve, before our massive hotel-wide party, join us for a special three-course dinner created by Cesar Da la Parra and Ernesto Gomez.

Starters

Choice of:

Eggplant Tartare with Caper Cream
Slowly roasted eggplant dressed with garlic, oregano, paprika, olive oil and vinegar. Served with caper chantilli cream.

Baked Goat’s Cheese Salad
Phyllo baked goat’s cheese with mixed greens, tomato confit and shallot-mustard vinaigrette.

Seared Scallops with Chorizo Dust
Served over polenta-parmesan mousse, grilled tomatoes and Malbec wine reduction.

Mains

Choice of:

Grilled Vegetable and Wild Mushroom Salad with Grilled Rustic Bread
Grilled marinated wild mushrooms, tomatoes, peppers, eggplant, roasted onions and corn served over grilled rustic bread with herbed goat’s cheese.

Grilled Lingcod with Deconstructed Viscaina Sauce
Grilled lingcod served with a spicy tomato sauce made with garlic, onion, peppers, green olives and potatoes.

Salt Crusted Tenderloin with Valdeon Blue Cheese Sauce and Wild Mushrooms
Salt crusted grilled beef tenderloin with Valdeon blue cheese sauce, cubed potatoes, mixed vegetable pisto and wild mushrooms.
